Lou Malnatis Pizzeria, with 24 Chicago area locations, is considered one of the pioneers of deep dish pizzerias. They make deep-dish pizza in the traditional Chicago pizzeria style. First the fresh mozzarella slices are put directly on the dough. Then, ingredients such as onions, mushrooms and pepperoni are added on top of the cheese. Finally, the pizza is doused with a thick layer of fresh tomato sauce created with chunks of pear and plum tomatoes. This old fashioned recipe has stayed true since 1943, when Grandpa Rudy Malnati worked to create the Chicago pizzeria.
Giordanos, famous for stuffed pizza, started out in 1974. The Chicago pizzeria maintains pizza becomes better with time, and as people change, so should the recipe. The owners, who named the restaurant after their mother, have surveyed customers for years and still go out to other Chicago pizzerias to taste-test the competition. The Chicago pizzeria claims its stuffed pizza recipe has been in progress for 200-300 years and it will continue to aim for perfection as time goes on. Last but not least, Ginos East has also been considered Chicago's greatest pizza place. The smallest of the four restaurants, Ginos East has 13 locations. Since the Chicago pizzeria opened in 1966, it has made deep dish pizza as well as variety of other foods.
